Summer time is the perfect occasion for easy and fun meals. Managing life and all these months bring with them – summer camp, karate, yoga, art classes and play dates plus our regular scheduled activities calls for easy meals on the go. I love to eat avocado all year round but this super food compliments and makes all summer foods tastier!
Today I want to share a recipe that mixes two of my favorite ingredients ever – avocado and goat cheese. Over the past year I have just become such a big fan of goat cheese and I find that its tanginess matches the smoothness of avocado.
I decided to make a bruschetta with these two ingredients as it is something that is quick to make, combines taste perfectly and makes for a great lunch or appetizer. They can also be made and shared with friends over a glass of wine.

1 tea spoon Olive Oil
Goat Cheese (Chavrie)
Red Pepper to garnish
Salt & Balsamic vinegar to taste
Cut the onion in thin slices. Add the teaspoon of olive oil to pan and cook the onions for about eight minutes (or until caramelized) in low heat. Put onions aside.
Slice bread and toast.
While bread is toasting cut avocado into small cubes
Take bread from toaster oven and spread one table spoon of goat cheese per slice. (You can add more or less depending on how much you love it) Top with onions and then avocados.
Add salt and balsamic vinegar to taste.
Garnish with red peppers
